usually in the same meeting where someone else is celebrating five-star reviews.
That contradiction says everything.
The business praises the result but punishes the reason.
Investor-jargon closes more restaurants than it keeps open.
It calls presence on the floor inefficiency,
labels care for the guest as cost,
and disguises extraction as intelligence.
A full team becomes “bloat.”
A balanced schedule becomes “excess.”
The language of finance quietly replaces the language of hospitality…
…And the soul of hospitality is lost in translation.
The Shape That Once Was
Before the obsession with lean labor, restaurants ran full—not bloated but balanced.
The kitchen and the dining room moved like twin systems of grace.
The chef’s brigade kept the line steady: the saucier patient, the poissonnier exact, the garde-manger plating before the next course was fired. Each movement anticipated the next.
Out front, the rhythm echoed. The maître d’hôtel shaped the room’s tone.
The captain guided the section; the back waiter cleared before a guest looked down.
And somewhere between them, the sommelier read the tempo… not selling but conducting. They elevated the meal’s motion and emotion from glass to glass,
the bridge between kitchen and conversation.
It wasn’t excess. It was harmony.
Every detail had someone to hold it.
When the Math Took Over
Then came the spreadsheets. Suddenly, harmony looked expensive.
Presence looked inefficient. “Lean” became a mantra.
Cutting became a sign of intelligence.
And restaurants began to believe that less could somehow create more.
The pandemic sealed the lesson in panic.
Teams had to shrink to survive.
Brigades dissolved into job titles that meant everything and nothing at all.
Managers started expediting.
